Yes, and it matters that you asked. Plaster over lath is common in Denver homes built before roughly 1950. A repair that treats it as drywall will crack out at the edges. The right approach keys the new material into the existing plaster rather than butting it against the face.
Possible, but it is the most demanding surface there is. A Level 5 wall has no texture to disguise a transition, so the repair depends entirely on how flat the compound is sanded and how wide it is feathered. Expect more coats and more drying time than a textured wall would need.
Because texture is what your eye reads first. A patch can be perfectly flat and still announce itself if the orange peel around it is heavier, or the knockdown is flatter, or the surface is smooth where the wall has a subtle spatter. Matching it is the difference between a repair and a patch.
